摘要:研究以气相色谱-质谱联用和高效液相等手段,对韩城大红袍花椒中的挥发油含量组成以及麻味物质羟基-α-山椒素含量进行测定,并以此分析比较不同干燥方法以及粉碎等过程对大红袍品质的影响三结果表明:晒干和烘干大红袍中挥发油含量分别降低16.00%和38.57%,

其中萜烯类成分含量降低18.48%和17.65%,而醛酮类成分升高16.35%和16.30%三粉碎加工处理虽然会对大红袍中挥发油带来显著损失,但将有效地促进大红袍中麻味成分的提取三大红袍粉碎至国家标准要求的80目细度时挥发油损失56.46%,而羟基-α-山椒素得率则提高48.46%三
